TERROIR
The Saint-Véran appellation is divided into two distinct parts. Both occupy the slopes of the Solutré massif. The structure of this ridge is formed of Middle Jurassic limestone. On the western slopes of these rocks, in older terrain (lias), the steep slopes are made up of gray marl (vineyards facing south and west of Chasselas and Leynes). On the gentle slopes of the eastern side of the rocks, marly limestone dominates (vineyards facing east of Prissé and Davayé). The Côte Dorée cuvée comes from very steep, south-facing terroirs on limestone soils.
TASTING AND PAIRINGS
Its clean, crisp attack with citrus notes calls for dishes that temper its exuberance somewhat. A creamy fish, poached or lightly pan-fried, will play this role successfully, especially as the mineral touch of Saint-Véran and its floral aromatic palette will respond masterfully to the iodine and delicacy of the fish flesh.
Seafood-based variations are also suitable, as are seafood or mushroom risottos, whose creamy texture will be nicely complemented by the wine’s citrusy frankness.
